The new growth of Greens is the halmark of spring.The energy of the new growth helps move the energy in the body to promote the activity of the season.

 

Roasted Green Beans with Garlic and Pine Nuts from the Moosewood CookBook

INGREDIENTS

2 Tbsp. olive oil
1 lb. fresh whole green beans, trimmed
1 cup thinly sliced onion
10-112 medium cloves of garlic, peeled S & P
1-2 Tbsp. balsamic vinegar
1 cup toasted pine nuts

1) Preheat oven to 4oo degrees. Brush a large baking pan with olive oil.
2) Spread the green beans, onions, and garlic cloves on the tray and sprinkle with S & P.
3)Bake for 20 minutes, intermittently stirring or shaking the tray.
4) remove from oven; transfer to a bowl. Drizzle with vinegar, toss and add a little more Pepper.
5) Serve at room temp, topped with pine nuts.
